Arbequina Olive Oil
Arbequina EVOO is an oil traditionally associated with Lleida and Tarragona, although in recent years it has spread across Spain, particularly Andalusia and Castilla-La Mancha. Arbequina is a small olive, which makes it especially well suited to modern super-high-density plantations.

What Is Arbequina Oil?
The Arbequina olive is one of the smallest used to make oil in Spain. It weighs around 2 grams on average and has a high fat content.
Arbequina olives usually ripen between the second week of December and the second week of January. The tree's foliage is less dense, and its leaves are close to dark green in color.
It is an oil with a very smooth, sweet flavor, which makes it easy to enjoy for palates that aren't used to EVOO.
When it comes to storage, this is one of the more demanding oils, as it is less stable and more prone to oxidation, due to its high concentration of polyunsaturated fatty acids. It's worth paying attention to its best-before date and storage instructions so that it stays in perfect condition until you use it.
Characteristics of Arbequina Oil
One of its defining traits is its sweet flavor, with no bitter aftertaste at all. Generally speaking, Arbequina oil is the right choice for anyone looking for a smooth Extra Virgin Olive Oil. It is a highly aromatic oil, with fruity notes of banana and apple.
It's also worth noting that Arbequina oil has slightly lower polyphenol levels than other varieties.
The main characteristics of Arbequina oil are:
- The olive is short and elliptical, green in color, turning yellowish as it ripens.
- Its coloring shapes the color of typical Arbequina oil: a greenish-yellow oil that becomes clearer over time.
- The Arbequina olive tree has short, elliptical leaves of medium width.
- Arbequina is cold-resistant.
- It is susceptible to olive fly and to chlorosis in very hot soils.
- A high-yielding variety with consistent, regular production.
- It is an early-ripening variety.
- It is grown in hedgerow planting systems to improve harvest yields.
- Its oil is smooth and fluid, with a very distinctive fragrance.
- A high percentage of oleic acid, which enhances its beneficial properties.
Properties of Arbequina Oil
Once Arbequina olives are milled at the mill, the resulting oil has fruity, almond-like aromas, while its flavor is only very slightly bitter and peppery, leaving no dryness on the palate.
Arbequina Extra Virgin Olive Oil is considered a clean, fresh, herbaceous oil, with notes of apple, sweet almond and even hints of artichoke. This type of oil contains fewer polyphenols than other varieties, giving it a very smooth taste.
All of these nuances are enriched or vary depending on the olive grove and the area it comes from.
Thanks to its sweet flavor, Arbequina EVOO is perfect for introducing children to olive oil.
Uses of Arbequina Oil
Arbequina oil leaves barely any aftertaste and never overpowers the flavor of food. It pairs beautifully with all kinds of dishes, including white fish and meat, as well as cooked or raw vegetables.
It is one of the few oils ideal for making delicious mayonnaise and delicate sauces, and thanks to its characteristic sweetness it is widely used in desserts as a substitute for butter. You can use it in cakes and even ice cream, or simply drizzle it raw over toast.
Used raw, it's the perfect partner for toast and salads with ingredients such as kiwi, apple and raisins. It even works in fruit salads and fruit purées.
It is also recommended for fish and seafood, such as boquerones en vinagre (marinated anchovies), salmon marinades and more.
