What are the benefits of Extra Virgin Olive Oil straight from the mill?
Everyone who chooses an Extra Virgin Olive Oil direct from the mill has one thing in common: we care about our wellbeing and want to nourish ourselves with quality products.
We're also well aware that the big manufacturers have one goal: to create cheaper and cheaper products — increasingly processed, with artificially engineered flavors, more profitable for them and, of course (though they'll never say it out loud), worse and worse for us, standing in the way of a complete, healthy diet.

If you haven't yet tried an Extra Virgin Olive Oil direct from the mill, let me explain the benefits in the simplest way possible: Extra Virgin Olive Oil is a juice — yes, just like orange juice. It comes from the fruit of a tree, the olive tree. And like any juice, if it isn't handled with the utmost care, it loses everything: its beneficial properties, its flavour, its aromas, its character.
Have you ever tasted something and thought: "wow, this is incredible! Delicious! Extraordinary! I've never tasted anything like it!"? Of course you have.
Now be honest — has that ever happened to you with an olive oil?
If the answer is yes, you're lucky. If the answer is no, that's completely normal — and I'll explain why.
What they don't want you to know about Extra Virgin Olive Oil
EVOO is officially classified as "Extra Virgin" based on two main parameters:
- It must be obtained exclusively by mechanical means
- The olives must be of superior quality
Superior olive quality is measured primarily by acidity. To qualify as Extra Virgin, acidity must be below 0.8°. So what do the big manufacturers do? Here's an example:
Take 750ml of an oil with 1° acidity (which doesn't qualify as Extra Virgin) and blend it with 250ml of an oil with 0.2° acidity. What do you get? (drumroll…): ONE LITRE OF OIL WITH 0.8° ACIDITY!
And there's the trick: I start with an oil that was far inferior, but by adding 25% of a much better oil, I hit the minimum 0.8° acidity threshold for Extra Virgin certification. Bingo! Exactly what we talked about at the start.
Do you think there's a difference between that blended litre — which technically qualifies as Extra Virgin by the maths — and a litre of 100% original Extra Virgin Oil with 0.2° acidity? It couldn't be more obvious. They have nothing in common, neither in quality nor in flavour.
It's a troubling reality, but there it is.
Picture it with orange juice.
Imagine you order a freshly squeezed orange juice at a café. The owner grabs two mediocre oranges from the back, juices them, then gets in the car, drives to another town, finds a truly exceptional orange, juices it, drives back, and mixes the two together. The result is a perfectly decent juice. He serves it to you. You drink it thinking it's quite good. But you'll never actually taste what a juice made from three of those exceptional oranges would be like — and you certainly won't get the full benefits: out of sight, out of mind.
Why an Extra Virgin Olive Oil with a name and a story?
Let's stay with the orange juice analogy — it makes things pretty easy to follow, doesn't it? 😉
That café owner runs a chain of thousands of locations across Spain, so he thinks: instead of buying two mediocre oranges and having to go out and find one exceptional orange to blend in every single time, it would be far cheaper to buy tonnes of pre-squeezed mediocre oranges and 25% pre-squeezed exceptional ones, blend them all, bottle them, and store everything in a logistics centre — then ship "the good stuff" to every location whenever they need it.
But where do you find that many oranges? Impossible! I don't know any growers personally. And dealing with hundreds of cooperatives would be a full-time job.
That's where the big traders come in — they're the ones buying and selling vast quantities of lower-grade and higher-grade oils from cooperatives, then supplying them to the "chain owners." Because they buy in such enormous volumes, they have enormous control over supply and demand, which means they can squeeze prices from both ends.
And where is the juice from those exceptional oranges, freshly pressed? It's nowhere to be found in a supermarket or a big-box retailer.
Why? Because these extraordinary oils with a real identity and provenance are in the hands of growers who simply don't have the infrastructure to sell directly to you. Some export. Others sell through the hospitality trade, and so on.
Selling directly to you — as an individual — is so complicated that very few of them manage it.
Why Extra Virgin Olive Oil direct from the mill?
Here's another secret they'd rather you didn't know: the big operators buy that enormous quantity of "olive juice" at the start of the season, bottle it, and then store it bottled in large logistics centres for months and months — where it loses flavour and beneficial properties with every passing day.
Imagine how different that is from an Extra Virgin Olive Oil direct from the mill, stored in perfect conditions, in tanks specially designed for the purpose, at a constant temperature, protected from oxidation caused by light, air, or heat.
There's simply no comparison.
