What are the benefits of Extra Virgin Olive Oil direct from the mill?
Everyone who chooses an Extra Virgin Olive Oil direct from the mill has one thing in common: we care about our wellbeing and about nourishing ourselves with quality products.
We're also well aware that the big manufacturers have only one goal: to produce cheaper and cheaper, more and more processed products, with artificially created flavours, more profitable for them and, of course (though they'd never say it), increasingly worse for us — products that get in the way of a complete, healthy diet.

And like any juice, if it isn't handled with the utmost care, it loses all its properties: the beneficial ones as well as the organoleptic ones (that is, flavour, nuance, aroma, and so on).
Have you ever tasted something and said: "Wow! This is incredible! Delicious! Extraordinary! I've never tasted anything like it!"? I'm sure you have.
Now tell me honestly — has that ever happened to you with an Olive Oil?
If the answer is yes, you're lucky. If the answer is no, that's perfectly normal — let me explain why.
What they don't want you to know about Extra Virgin Olive Oil
EVOO is officially classified as "Extra Virgin" based on two main parameters:
- That it is obtained exclusively by mechanical means
- That the olives are of superior quality
Superior olive quality is measured primarily by acidity. To qualify as Extra Virgin, the acidity must be below 0.8°. So what do the big manufacturers do? I'll explain with an example:
Take 750ml of an oil with 1° acidity (which doesn't qualify as Extra Virgin) and blend it with 250ml of an oil with 0.2° acidity. What do you get? (drumroll…): ONE LITRE OF OIL WITH 0.8° ACIDITY!
So here's the conclusion: I start with an oil that was far inferior, but by adding 25% of a much better oil, I just hit the 0.8° acidity threshold for Extra Virgin classification. Bingo! Exactly what we were talking about at the beginning.
Do you think there's a difference between that blended litre — which "comes out" as Extra Virgin purely by the maths — and a litre of the 100% original Extra Virgin Oil that had 0.2° acidity?… It couldn't be more obvious! They have absolutely nothing in common, neither in quality nor in flavour!
It's shocking, but that's how it is.
Picture it with a freshly squeezed orange juice.
Imagine you order a freshly squeezed orange juice at a café. The owner grabs 2 of the worst oranges in the back, squeezes them, then gets in his car, drives to another town, finds one truly exceptional orange, squeezes it, drives back, and mixes the two juices together. The result is a juice that tastes decent enough. He serves it to you. You drink it thinking it's quite good. In reality, you'll never know what a juice made from three exceptional oranges actually tastes like — let alone the benefits it would bring. Out of sight, out of mind.
Why an Extra Virgin Olive Oil with a name and a story?
Let's stick with the orange juice example — easy to follow, right? 😉
Now this café owner runs a chain of thousands of locations across Spain. So he thinks: instead of buying two inferior oranges and then going out to find the exceptional one to blend each time, it would be far cheaper to buy tonnes of inferior pre-squeezed oranges and 25% of exceptional pre-squeezed ones, blend them, bottle them, and store it all in a logistics centre to ship "quality" juice to every location whenever needed.
But where on earth do you find that many oranges? Impossible! I don't know any growers personally! And dealing with hundreds of cooperatives would be a full-time job.
That's where the big trading companies come in. They're the ones who buy and sell large volumes of inferior oils and better ones from cooperatives, then sell them on to the "chain café owners." Because these large traders buy in bulk, they control supply and demand — and can squeeze prices at both ends.
And where is the freshly squeezed juice from the exceptional oranges? It doesn't exist there. You won't find it in a supermarket chain or a big-box retailer.
Why? Because these extraordinary, outstanding oils with a real name and story behind them are in the hands of growers who simply don't have the capacity to sell directly to you. Some export, others supply the hospitality trade, and so on.
Selling directly to you — to individuals — is so complicated that very few of them manage it.

Here's another big secret they don't want you to know: the big players buy that enormous volume of "olive juice" at the start of the season, bottle it, and store it in their vast logistics centres for months and months — where it loses flavour and beneficial properties day by day.
