
Aunt Mercedes' Fideuá Recipe

Ready to go through the ingredients for this great dish? Let's dive in.
– 20 g olive oil
– 250 g thick noodles
– Fish stock (a stock cube works fine)
– 150 g peeled prawns
– 1/4 kg mussels
– 1 red pepper. 1 onion
– Saffron

Step-by-step preparation.
- Heat the Extra Virgin Olive Oil in a wide, shallow pan.
- Finely chop the onion and red pepper and sauté for a few minutes until softened.
- Add approximately one litre of fish stock and a pinch of saffron.
- After a few minutes, add the noodles, prawns and mussels.
- Once the noodles are tender, remove the pan from the heat, cover with a clean cloth and leave to rest for about 10 minutes.
And that's it — Aunt Mercedes's fideuá is ready to serve. As you can see, her recipes are always straightforward but absolutely delicious!!
