Polyphenols: The Hidden Treasure of Olive Oil
What are polyphenols and why do they matter?
If you’re looking for a real EVOO, one with body, character and depth, there’s something you need to know about: polyphenols.
In 2003, the Spanish government funded the largest nutritional clinical trial in European history.
It was called PREDIMED.
It involved 7,447 people at high cardiovascular risk.
A team of more than 300 doctors and researchers worked across 11 centers throughout Spain.
The goal was simple but ambitious:
To find out whether the Mediterranean diet, with olive oil at its heart, could prevent heart attacks, strokes and cardiovascular death.
The study was meant to run longer.
But it had to be stopped early.
Not because something went wrong.
But because the results were so clear that the ethics committee decided it would be unfair not to give every participant access to what was working.
The group that followed a Mediterranean diet with Extra Virgin Olive Oil cut their risk of heart attack, stroke or cardiovascular death by 30% compared with the control group.

Yes, you read that right.
30%.
This isn’t a wellness headline.
It’s the result of 4.8 years of follow-up with 7,447 people, published in the most prestigious medical journal in the world.
But there’s something that study doesn’t tell you directly.
Something that completely changes how you should choose your oil.
Why buying any old “Extra Virgin” isn’t enough
In the PREDIMED study, the oil used wasn’t just any olive oil.
It was an EVOO selected specifically for its high polyphenol content.
So what are polyphenols?
They’re the bioactive compounds in olives with the strongest scientific backing:
- They reduce markers of chronic inflammation linked to cardiovascular and metabolic disease (see PMC study on anti-inflammatory properties)
- They protect cells from oxidative stress, one of the main drivers of cellular aging (see OLIVAUS clinical trial)
- They support cardiovascular health by reducing oxidized LDL, improving HDL and helping regulate blood pressure (see systematic review on EVOO and cardiovascular health)
- They boost cognitive function, improving memory and protecting against neurodegenerative decline (see study on polyphenols and neuroprotection)
- They optimize mitochondrial function, improving cellular energy metabolism (see review on polyphenols and mitochondria)
But for them to have a real effect, you need the right concentration.
And that’s where the problem lies.
The big “Extra Virgin” myth
Two oils can both legally be “Extra Virgin” and have completely different polyphenol levels.
It’s like comparing a 10mg vitamin C supplement with a 1000mg one.
Technically, both “contain vitamin C”.
But only one has a real effect on your body.
The same goes for olive oil and polyphenols.
EU regulations require a maximum acidity of 0.8% for an oil to be Extra Virgin.
They say nothing about minimum polyphenols.
And polyphenols are lost in four ways that large-scale production can’t avoid:
- Polyphenols break down over time — light, heat and oxygen destroy them
- Most oils are harvested late — ripe olives have a lower polyphenol concentration than green ones
- They’re filtered to make them “smoother” — losing the active phenolic compounds
- They spend months in the distribution chain — by the time they reach your home, the most delicate compounds have degraded
The label doesn’t tell you how many polyphenols are in the oil you’re buying.
If that figure isn’t there, you have no way of knowing.
The protocol backed by European science
You don’t need to spend a fortune.
In 2011, EFSA — the European Food Safety Authority — approved an official health claim:
“Olive oil polyphenols contribute to the protection of blood lipids from oxidative stress.”
Source: Regulation (EU) No 432/2012 — Official Journal of the EU
That claim can only be used for oils with more than 250 PPM (250 mg/kg) of polyphenols.
And the documented benefit comes from 20g a day of that oil.
20g.
Two tablespoons.
The dressing on a salad.
A drizzle over toast.
What many of our customers take straight on an empty stomach every morning.
The difference isn’t how much you consume.
It’s which oil you use.
How to get an EVOO with the polyphenols that matter
You don’t need to import oil from anywhere.
You don’t need to pay sky-high prices.
Our Arraigo Unfiltered contains more than 570 mg/kg of polyphenols.
More than double the threshold recognized by EFSA.
Why is it so concentrated?
- It’s harvested early — green olives have a higher polyphenol concentration than ripe ones
- Unfiltered — it keeps all its active phenolic compounds
- No blending — it comes entirely from the same olive grove, not a blend of oils like most of what you’ll find on the market
- Bottled immediately — it doesn’t spend months in logistics centers losing its most delicate compounds
These figures aren’t marketing.
They’re results from a certified laboratory, Season 2025/26, published batch by batch.
The real figures for each oil
| Oil | Polyphenols | Acidity |
|---|---|---|
| Prima Mensa ↗ | 700 mg/kg | 0.20% |
| Estirpe Picual Unfiltered ↗ | 665 mg/kg | 0.13% |
| Arraigo Unfiltered ↗ | 570 mg/kg | 0.21% |
| Early Harvest ↗ | 380 mg/kg | 0.18% |
Certified laboratory analysis · Season 2025/26 · Figures published per batch
The EFSA threshold is 250 mg/kg.
Our lowest oil exceeds it by more than 50%.
Our highest nearly triples it.
How do you keep an EVOO this good at its best?
Polyphenols are delicate.
Light breaks them down. Heat breaks them down. Oxygen breaks them down.
Every time you open the bottle, air gets in.
That’s why, if you’re not yet a Mi Oliva Gourmet customer, I’d like to give you a fully opaque oil dispenser with a system that keeps air out.

Here’s what people who already use it have to say:
⭐⭐⭐⭐⭐ — Asunción M.
“A really, really good oil that doesn’t go unnoticed. I use it on toast and salads, and it opens up a whole world of olive oil flavor, the oil of the old days, the oil we’ve always known. Nothing like what you find in big supermarkets. Plus, we need to support small businesses so they can survive.”
⭐⭐⭐⭐⭐ — Simo L.
“Exquisite as always. I tried this oil a few years ago and we loved it. I’ve had both the filtered and the unfiltered (my favorite), and both are a delight, with flavors and aromas that open up in your mouth and throat. Whenever I can, I’ll stick with this oil.”
⭐⭐⭐⭐⭐ — Juan Antonio R.
“UNBEATABLE. The best oil I’ve ever tasted, and I’ve tasted quite a few. It’s a real treat for the nose and the palate. In a word: UNBEATABLE. Please never stop making this wonderful juice. Thank you.”
⭐⭐⭐⭐⭐ — Ángela Rosa Z.
“An oil of excellent quality with an unrivaled flavor. It’s the first time we’ve tried it at home and we’re delighted with all its sensory qualities, which somehow make it special and unique. My sincerest congratulations, and good health and good luck to you all.”
Two options:
❌ Option 1Keep buying the same oil as always without knowing how many polyphenols it contains — because the label doesn’t say. It might be a good oil. It might not. Without the analysis, there’s no way to know. |
✅ Option 2Invest less than €0.50 a day in an oil whose exact figures you know: certified laboratory analysis, Season 2025/26, with more than 570 mg/kg of polyphenols. More than double the threshold recognized by EFSA. |
The choice is yours.
