Speaking with Migue, our grower, he shared a saying his grandfather always repeated: "If it doesn't rain in October, the olive tree stays asleep." It's a poetic way of explaining that, as robust as the olive tree is, it needs this water replenishment to wake up and stay active.

Without autumn rain, the tree's ability to deliver a good harvest diminishes noticeably. It doesn't stop producing altogether, but without adequate hydration at this critical moment, both the quality and quantity of the fruit are affected.

These rains help the olive tree's roots absorb the nutrients needed for the growth of the fruit that will become the next harvest.

Since rainy days invite us to stay home and enjoy comforting food, here are a couple of recipes I'm particularly fond of — simple dishes that let the flavour of the EVOO shine.

They're perfect for those cool, rainy days when you just want something that makes you feel good.

Roasted tomato soup with Estirpe EVOO

  • 4 ripe tomatoes
  • 2 garlic cloves
  • 1 onion
  • 50 ml EVOO
  • Salt and pepper to taste
  • Fresh basil to garnish

Method:
Start by roasting the tomatoes with the onion and garlic in the oven for about 25 minutes at 200°C. Once roasted, blend them with a splash of intensely flavoured, slightly peppery EVOO, such as Estirpe tradicional. Finish with salt and pepper to taste.

Serve hot with an extra drizzle of oil on top and garnish with fresh basil leaves. This soup is perfect for rainy days and beautifully showcases the flavour of the EVOO.

  • 100g fresh spinach
  • 50g flaked almonds
  • 50 ml EVOO
  • Crumbled feta or cabrales cheese
  • Sea salt to taste

Method:
Lightly sauté the spinach in a pan with a good Extra Virgin Olive Oil — something full of flavour — over a medium heat, just long enough to preserve all its properties and soften the spinach slightly.

To finish, add the flaked almonds, the cheese in small pieces, and a touch of sea salt.

This dish couldn't be simpler, yet it's full of flavour — a real surprise for guests on a cool day!
