The origin of the expression "Green Gold" for Extra Virgin Olive Oil

Long ago — we're talking about our great-great-grandparents' time — Extra Virgin Olive Oil was never filtered. The finest oil, the one olive growers kept for themselves and their families, was the first to be collected: made from the first cold extraction, using the traditional beam press.

This oil had a pure, deep green color — a rich, vivid olive green — and a genuinely intense flavor, unlike anything else in Mediterranean cooking, perfect for summer salads, thanks to its cold extraction. And that is how it came to be known as "Green Gold."
