Arbequino EVOO is a variety of olive oil originally from Lleida and Tarragona, though in recent years it has spread throughout Spain, particularly across Andalusia and Castilla-La Mancha. It is known for producing a small olive that adapts very well to modern high-density superintensive plantations.

What is Arbequino Olive Oil?

The Arbequina olive is one of the smallest varieties used for oil production in Spain. It has an average weight of 2 grams and a high fat content.

Arbequina olives typically ripen between the second week of December and the second week of January. The olive tree's canopy is relatively compact, with leaves that tend toward a deep green.

It produces an oil with a very smooth, sweet flavour, making it an easy introduction for those not yet accustomed to EVOO.

In terms of storage, this is one of the more demanding oils — it is less stable and more prone to oxidation due to its high concentration of polyunsaturated fatty acids. Pay close attention to the best-before date and storage instructions to keep it in optimal condition.

Characteristics of Arbequino Olive Oil

One of its defining characteristics is its sweet flavour, with no bitter aftertaste. Arbequino oil is ideal for those looking for a smooth Extra Virgin Olive Oil. It is a highly aromatic oil, with fruity notes of banana and apple.

It is also worth noting that Arbequino oil has slightly lower polyphenol levels than other varieties.

The main characteristics of Arbequino olive oil are:

  • The olive has a short, elliptical shape; it starts green and gradually takes on a yellowish hue as it ripens.
  • This colour progression influences the typical tone of Arbequino oil — a greenish-yellow that becomes more transparent over time.
  • The Arbequino olive tree has short, medium-width elliptical leaves.
  • The variety is cold-hardy.
  • Susceptible to the olive fruit fly and to chlorosis in very warm soils.
  • A high-yielding variety with consistent, regular production.
  • An early-ripening variety.
  • Cultivated in trellis-trained systems to maximise harvest yield.
  • Its oil is characterised by a smooth, fluid texture and a very distinctive fragrance.
  • High oleic acid content, which enhances its beneficial properties.

Properties of Arbequino Olive Oil

Once Arbequina olives are pressed at the mill, the resulting oil offers aromas reminiscent of fruit and almonds, while its bitter and peppery notes are very subtle, leaving no dryness on the palate.

Arbequino Extra Virgin Olive Oil is considered a clean, fresh and herbal oil, with notes of apple, sweet almonds and even hints of artichoke. This variety contains fewer polyphenols than others, which gives it a particularly mild taste.

All these nuances shift and deepen depending on the olive grove and the region the oil comes from.

Arbequino EVOO is perfect for introducing younger palates to olive oil, thanks to its naturally sweet flavour.

Uses of Arbequino Olive Oil

Arbequino oil leaves virtually no aftertaste and never overpowers the flavour of other ingredients. It pairs beautifully with a wide range of dishes, including white fish, meat, and both raw and cooked vegetables.

It is one of the few oils perfectly suited to making silky mayonnaises and delicate sauces, and it is widely used in baking and desserts — its characteristic sweetness makes it an excellent substitute for butter in everything from cakes to ice creams, or simply drizzled over toast.

Served raw, it is an ideal companion for toast and salads, alongside ingredients such as kiwi, apple and raisins — and just as welcome in fruit salads and purées.

It is also recommended for fish and seafood dishes, such as anchovies in vinegar, salmon marinades, and more.
