The problem is simple but critical:
Two oils can both be legally labelled "Extra Virgin" while one has zero polyphenols and the other has 800 PPM.

- Polyphenols degrade over time (light, heat and oxygen destroy them)

So even if your bottle says "Extra Virgin," its polyphenol content is probably ZERO PPM by the time you open it.
