Aunt Mercedes's Chicken Recipe

What ingredients do we need?

  • 1 whole chicken
  • A drizzle of olive oil (20 g)
  • 1 garlic clove, 1 tomato, 1 onion and 1 red pepper
  • Wine

How do we make it?

  1. Pour a drizzle of olive oil into a pan or casserole dish, wait until it's hot, then add the chicken.
  2. While the chicken cooks, roughly chop the garlic, onion, tomato and peppers — you'll need them shortly.
  3. Once the chicken is golden, remove it from the pan and, in the same pan, sauté the chopped garlic and onion.
  4. When they've softened and turned golden, add the chopped tomato and pepper and stir everything together.
  5. After 10 minutes, return the chicken to the pan and pour in the wine.
  6. Taste and adjust the seasoning if needed.
  7. Finally, let the chicken simmer until tender and coated in its own sauce.
