Today we're sharing Aunt Geli's mayonnaise recipe — delicious and one of a kind. And you're probably wondering… who is Aunt Geli? 😄 Aunt Geli is 82 years old and cooks like nobody's business. She's the aunt of Ricardo, one of the Mi Oliva Gourmet team members who helps make it possible for us to bring you the finest Extra Virgin Olive Oil. She's a mother of 6 and aunt to no fewer than 14 nieces and nephews. Can you guess who does the cooking when the whole family gets together? That's right — Aunt Geli 🙂 At home, her mayonnaise recipe goes by one name: the supermayo! Aunt Geli tells us why:

The name comes from the fact that almost everyone makes mayonnaise with sunflower oil — but at home, where we're devoted fans of the Olive Oil from Puente Genil, we make ours entirely with extra virgin olive oil. So you can just imagine how it tastes, and how irresistible everyone finds it — they started calling it "the supermayo"!

Ingredients for Aunt Geli's mayonnaise recipe

The ingredients for Aunt Geli's mayonnaise — the supermayo — as she herself has revealed to us, are:

  • 300ml of Extra Virgin Olive Oil from Puente Genil — you can use another oil, but then it won't be the supermayo 😀
  • 2 eggs
  • The juice of half a lemon
  • A splash of vinegar
  • Salt

Making the supermayo is so simple! It has just two secrets: whisk with plenty of love (and patience 😄) and a great Extra Virgin Olive Oil from Puente Genil — unfiltered, if at all possible.

  1. Crack the two eggs into a bowl.
  2. Next, it's best to add the squeezed half lemon — this makes it less likely the mayonnaise will split when you whisk it.
  3. Then pour in the Olive Oil.
  4. Whisk slowly at first, then gradually faster — though never too fast.
  5. Once the mixture starts to come together into a cream, add the splash of vinegar and the salt.
  6. Keep whisking until everything is well combined and perfectly smooth.

And there you have it! Your supermayo, Aunt Geli-style — gorgeous and ready to go with just about anything!
